Preparing Sno Peas

Pinch or cut the top stem to peel away the string from top to bottom.

Peeling Tomatoes

To peel tomatoes, boil a pot of water and prepare a bowl of ice and ice water as well. Before placing the tomatoes in the boiling water, cut a shallow “x” in the skin at the bottom of each tomato. Then, place the tomatoes into the boiling water, boil for about 20 seconds, or until the skin starts to peel off. Remove the tomatoes with a slotted spoon, or skimmer and immediately place them into the ice bath.

The skin will be loosened with the cold water. After this, the skin will be very easy to peel off.

Protect Your Hands When Cooking With Chiles

You should wear rubber gloves when cooking with chiles, to protect your hands from the capsaicin, which is the potent chemical responsible for the heat of the chiles. Or you could rub your fingers with vegetable oil to prevent the capsaicin from penetrating the skin. Be extremely careful of touching your eyes or face when cooking with chiles, and be sure to always wash your hands afterwards. If you wash your fingers in a mixture of 1 quart water and 1 tablespoon bleach, this will neutralize the capsaicin.
